It is all about crispy tacos, salsa, gorgeous beans, crispy pork and a lovely taco. To start with, chop one red onion and place into a hot pan with olive oil. Then, add ½ teaspoon of Cajun spice.
When the onion is golden, add 2 tins of tinned black beans.
Now you can reinvigorate your leftover pork. You can use either roast or boiled pork. Slice 200 g of cooked pork. Place it into a separate hot pan with some olive oil. Add a teaspoon of smoked paprika. Cook for nearly 10 minutes.
Then, make a humble salsa. Slice 1 green pepper, 1 jalapeno, 1\2 of red onion and 1 tablespoon of red wine vinegar. Then, add 1\2 teaspoon of ground clove. Season with salt and give all that a good mix.
Time to assembly your tacos. Load up your taco with gorgeously dark beans, then, add finely shredded iceberg. Then, whack your humble salsa and, of course, add your delicious pork.
